Mutton chops are a nineteenth-century style that peaked in the Victorian era, when wide whiskers with a bare chin were ordinary on soldiers, politicians and shopkeepers alike. The name comes from the shape: narrow at the top and fanning out at the bottom, like a leg of mutton.
The American general Ambrose Burnside wore such a famous version, joined through the moustache, that his name was flipped into the word "sideburns". Today the look turns up on musicians, period-drama fans and anyone who wants facial hair that nobody else in the room has.

How long it takes to grow them in
Plan on six to ten weeks without trimming the cheeks before the chops can be properly shaped. Facial hair grows roughly a centimetre a month, and the flare only looks deliberate once the lower cheek hair is long enough to stand out against the shaved chin.

How we cut the shape
The curve that separates the chop from the bare chin is the whole style, so we cut it with care rather than speed. We usually bring it down from the corner of the mouth in a gentle arc that meets the jawline roughly below the outer edge of the lip.
Inside the chop we take the bulk down with a guard, often a #3 or #4 (10 to 13 mm), then leave a touch more length at the widest point to exaggerate the flare. The top blends into the haircut at the temple the same way a beard fade does, and every edge gets a razor finish after the hot towel.
Who should try mutton chops
Chops add width to the lower cheeks, so they suit long and narrow faces best. On a very round face they can make the cheeks look fuller, which some people like and many do not.
